Wood Fire Roasted Cashew Nuts

Our ‘Mud Pots’ contain raw Cashew Nuts & Himalayan Rock Salt. The pots are placed in a kiln fuelled with fire wood. The Cashew Nuts are smoked and dry roasted within the mud pot taking on the aroma of the wood, which enhances the flavour of the nut. The wood-fire roasting process is inspired by the methods used in the villages of the Cashew Capital of the World, Quilon, imparting to the Nuts an ancestral taste and aroma.
